mixed bean salad
This is a vegetarian's delight with a mix of 4 delicious beans.
Suitable for people diagnosed with coeliac disease, those who are suffering from a gluten and wheat allergy or intolerance.
300g can black eye beans, drained and rinsed
300g can haricot beans, drained and rinsed
300g can broad beans, drained and rinsed
200g can red kidney breans, drained and rinsed
4 tbsp chopped fresh parsley
1 red onion, finely chopped
2 tbsp virgin olive oil
1 tbsp white wine vinegar or lemon juice
1. In a large bowl, combine all the ingredients together, toss lightly and serve.
