ingredients
400g can of ready to use chickpeas or 125g (4oz) chickpeas soaked overnight
Juice of 2 lemons
80ml Light Tahini
2 - 3 cloves of garlic
30ml virgin olive oil
pinch of paprika
freshly ground black pepper
a little sea salt if necessary
method
- Drain then cook the chickpeas in plenty of water for about 60 – 90 minutes or according to directions on the pack. Drain reserving the liquid or drain the chick peas from the can but do not reserve the liquid as the chickpeas are in brine, set aside.
- Put all the ingredients apart from the chickpeas into a blender or processor and liquidize, then slowly add the chickpeas until a thick paste is formed, add a little liquid from the home cooked chickpeas or water if necessary.
- Add the black pepper and any salt if necessary.
- Garnish with paprika.
