crunchy coleslaw
A delicious quick and easy recipe for homemade coleslaw.
Suitable for people diagnosed with Coeliac Disease, those who are suffering from a gluten and wheat allergy or intolerance.
Ingredients
85 g (3 oz) firm white cabbage
40 g (1 ½ oz) carrot
25 g (1 oz) raisins
1 celery stick – finely diced
1 small crisp red apple
15g (1/2 oz) sunflower seeds
10mlsp (2 tsp) lemon juice
30ml (2tbsp) plain Soya yogurt
Method
1. Core and finely dice the apple, place in a large bowl and add the lemon juice.
2. Finely shred the cabbage, wash and grate the carrot, add to the bowl.
3. Mix in the raisins, celery, sunflower seeds and yogurt, combineand serve.
Cooks Tip
White cabbage is traditionally used in coleslaw but red cabbage can also be used and adds spectacular colour. If carrots are washed well there is no need to scrape or peel this maximises the nutrients in the vegetable
