cabbage and pumpkin seed coleslaw
Try this twist on traditional coleslaw to liven up a picnic or buffet!
Suitable for people diagnosed with coeliac disease, those who are suffering from a gluten and wheat allergy or intolerance.
Quarter of a red cabbage
1 large carrot
1 small apple
1 tsp lemon juice
15g pumpkin seeds
2 tbsp natural yogurt
Dash of balsamic vinegar
1. Core and finely dice the apple, place in a large bowl and add the lemon juice.
2. Finely shred the cabbage, scrape and grate the carrot and add to the bowl.
3. Mix in the raisins, pumpkin seeds, vinegar and yogurt, combine and serve.
